Preheat the oven to 350ºF. Line 2 baking sheets with parchment paper.
In a large bowl, using an electric mixer, beat together the almond butter, eggs, and vanilla. Add the coconut sugar and beat to combine. Stir in the chocolate chips.
Roll heaping tablespoons of the dough into balls and place 2 inches apart on the baking sheets. Using your fingertips or a fork, flatten the balls slightly (to about ½-inch thickness).
Bake for 8-10 minutes, until they begin to brown around the edges. Cool the cookies completely on the baking sheets before serving or storing.
