- 2 cups creamy unsweetened almond butter
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 cup coconut palm sugar
- ½ cup dark chocolate chips
Instructions
- Preheat the oven to 350ºF. Line 2 baking sheets with parchment paper.
- In a large bowl, using an electric mixer, beat together the almond butter, eggs, and vanilla. Add the coconut sugar and beat to combine. Stir in the chocolate chips.
- Roll heaping tablespoons of the dough into balls and place 2 inches apart on the baking sheets. Using your fingertips or a fork, flatten the balls slightly (to about ½-inch thickness).
