Place the cashews, ¼ cup pistachios, shredded coconut, matcha powder, and salt in a food processor fitted with a steel blade. Process until finely ground. Add the dates and coconut oil and process until the mixture holds together when pinched between your fingers. Roll the mixture into 1-inch balls.
Finely chop the remaining ¼ cup pistachios. Roll the balls in the chopped pistachios. Store in the refrigerator in an airtight container.
