Matcha Pistachio Energy Balls Recipe

Matcha tea naturally adds festive color and a boost of antioxidants to this St. Patty's treat.

Ingredients

  • ¾ cup raw cashews
  • ½ cup raw pistachios divided
  • ¼ cup unsweetened shredded coconut
  • 2 teaspoons matcha green tea powder
  • Pinch of sea salt
  • 12 large Medjool dates pitted
  • 1 tablespoon coconut oil

Instructions

  • Place the cashews, ¼ cup pistachios, shredded coconut, matcha powder, and salt in a food processor fitted with a steel blade. Process until finely ground. Add the dates and coconut oil and process until the mixture holds together when pinched between your fingers. Roll the mixture into 1-inch balls.
  • Finely chop the remaining ¼ cup pistachios. Roll the balls in the chopped pistachios. Store in the refrigerator in an airtight container.
