Ingredients

Yukon Gold potatoes
scrubbed and diced (no need to peel)

diced white onion

boneless
skinless chicken breast halves, diced

cooked crisp bacon
crumbled

kosher or fine sea salt

teaspoon
freshly ground black pepper

shredded cheddar cheese
Instructions
Use a 6-quart slow cooker sprayed with gluten-free nonstick cooking spray. Add the potatoes to the prepared insert and then add the diced onion.
Add the chicken and bacon and top with salt, pepper, and cheese. Cover and cook on low for 6-7 hours or on high for about 4 hours.
