An easy gluten free recipe with only five simple ingredients. It's also cooked in the slow cooker so it requires less hands-on time.

Ingredients
- 4 Yukon Gold potatoes scrubbed and diced (no need to peel)
- ½ cup diced white onion
- 1 pound boneless skinless chicken breast halves, diced
- 6 slices cooked crisp bacon crumbled
- ½ teaspoon kosher or fine sea salt
- ½ teaspoon freshly ground black pepper
- 2 cups shredded cheddar cheese
Instructions
- Use a 6-quart slow cooker sprayed with gluten-free nonstick cooking spray. Add the potatoes to the prepared insert and then add the diced onion.
- Add the chicken and bacon and top with salt, pepper, and cheese. Cover and cook on low for 6-7 hours or on high for about 4 hours.
