1cooked rotisserie chickenmeat pulled off the bones and diced into bite-sized pieces
½medium red cabbagethinly sliced
½cupdiced apple
½cupsugar snap peaschopped
½cupdried cranberries or golden raisins
½cuppine nutschopped pistachios, or slivered almonds
¼cupraw apple cider vinegar
¼cupcoconut oilmelted and cooled
3tablespoonsmayonnaise or vegan mayonnaise
3tablespoonspure maple syrup
¼teaspoonkosher or fine sea saltor more to taste
Instructions
Place the chicken, cabbage, apples, peas, cranberries or raisins, and nuts in a salad bowl. Toss to combine.
In a blender, combine the vinegar, oil, mayonnaise, maple syrup, and salt. Blend until smooth. Pour the dressing over the salad and toss to coat. Cover and refrigerate for at least 1 hour or up to overnight.
