Instructions
Preheat the oven to 325ºF. Line 2 baking sheets with parchment paper.
In a large bowl, combine the oats, nuts, coconut, cinnamon, and salt. In a separate bowl, whisk together the mashed bananas, melted butter or coconut oil, and maple syrup. Pour the wet ingredients over the oat mixture and stir to combine thoroughly.
Divide the granola between the 2 lined baking sheets and spread it out evenly. Bake for 35-40 minutes until golden brown and fragrant, stopping every 10-15 minutes to stir the granola with a spatula. Cool completely before serving or storing. Store in an airtight container at room temperature.
