Banana Bread Granola
Banana bread meets breakfast cereal in this delicious but easy recipe. Homemade granola is a breeze to make.
Banana Bread Granola

Ingredients
- 3 cups gluten-free rolled oats
- 2 cups raw walnuts or pecans chopped
- 1 cup unsweetened shredded coconut
- 2 teaspoons ground cinnamon
- ½ teaspoon sea salt
- 2 large bananas mashed very well (about 1 cup mashed)
- 6 tablespoons butter or coconut oil melted
- 6 tablespoons maple syrup
Instructions
- Preheat the oven to 325ºF. Line 2 baking sheets with parchment paper.
- In a large bowl, combine the oats, nuts, coconut, cinnamon, and salt. In a separate bowl, whisk together the mashed bananas, melted butter or coconut oil, and maple syrup. Pour the wet ingredients over the oat mixture and stir to combine thoroughly.
- Divide the granola between the 2 lined baking sheets and spread it out evenly. Bake for 35-40 minutes until golden brown and fragrant, stopping every 10-15 minutes to stir the granola with a spatula. Cool completely before serving or storing. Store in an airtight container at room temperature.
