Instructions
Heat a grill to medium. Combine the sweet potatoes, fennel, 4 tablespoons olive oil, salt, and pepper in a large bowl. Toss to coat evenly. Grill the vegetables over medium heat for 6 minutes on each side or until tender. Remove from grill.
In a large bowl, toss together the greens, cherries, walnuts, cilantro, lime juice, and apple cider vinegar. Divide the salad and grilled vegetables between 4 plates and serve with additional olive oil, salt, and pepper for desired seasoning.
