Ingredients

tablespoon
extra-virgin olive oil

medium white onion
chopped

gluten-free wild rice blend
such as Lundberg Wild Blend

gluten-free chicken or vegetable broth
or water

kosher salt

teaspoon
freshly ground black pepper

cup
vacuum packed or jarred chestnuts
chopped

cup
dried cherries
chopped
Instructions
Heat the olive oil over medium-high heat.
Add the onion and cook until it starts to soften, about 5 minutes.
Add the rice blend and cook for 2 minutes, stirring.
Add the stock or water, salt, and pepper. Increase the heat to high and bring to a boil.
Cover the pan, reduce the heat, and simmer for 45 minutes or until all of the liquid has been absorbed and the rice is tender.
Stir in the chopped chestnuts and dried cherries.
Cover and let sit for 10 minutes.
May be served as is or stuffed loosely into a turkey.
