1poundassorted Yukon Gold, red, and purple miniature potatoes
1medium sweet potato
1medium green bell pepper
3medium shallots
1tablespoonextra-virgin olive oil
Salt and black pepperto taste
Instructions
Quarter the miniature potatoes, peel and dice the sweet potato, and chop the green pepper and shallot.
Heat the olive oil in a large skillet over medium heat then add vegetables to the pan. Sauté for 30 minutes or until the potatoes are tender. Season with salt and pepper to taste. Transfer to a serving dish and serve while still warm.
