Potato Medley Hash

Ingredients

  • 1 pound assorted Yukon Gold, red, and purple miniature potatoes
  • 1 medium sweet potato
  • 1 medium green bell pepper
  • 3 medium shallots
  • 1 tablespoon extra-virgin olive oil
  • Salt and black pepper to taste

Instructions

  • Quarter the miniature potatoes, peel and dice the sweet potato, and chop the green pepper and shallot.
  • Heat the olive oil in a large skillet over medium heat then add vegetables to the pan. Sauté for 30 minutes or until the potatoes are tender. Season with salt and pepper to taste. Transfer to a serving dish and serve while still warm.
