Ingredients

Russet potatoes
peeled and cut into 2-inch chunks

cup
half and half
1
cup
chicken or vegetable broth
4
ounces
soft goat cheese
¼
cup
finely chopped scallions
¼
cup
finely chopped fresh chives
2
tablespoons
finely chopped flat-leaf parsley
Sea salt and black pepper
to taste
Instructions
Place the potatoes in a large pot and cover with cold water.
Bring to a boil over high heat.
Reduce heat to medium and continue to boil until the potatoes are tender when pierced with a fork, 15-20 minutes.
Drain and return the potatoes to the hot pot over low heat.
Add the half and half, broth, and goat cheese.
Mash until desired consistency is reached.
Stir in the scallions, chives, and parsley.
Season to taste with salt and pepper. Serve.
