Ingredients
1(4 pound)fully trimmed and tied beef tenderloin
4tablespoonsextra-virgin olive oil
3tablespoonsgrainy gluten-free mustard
2garlic clovesminced or grated
2tablespoonsfresh rosemaryminced
2tablespoonsfresh thyme leavesminced
1tablespoonkosher salt
1½teaspoonsfreshly ground black pepper
1½cupssour cream or dairy-free sour cream alternative
4tablespoonsgluten-free prepared horseradish
Instructions
Dry the meat well with paper towels.
Combine the oil, mustard, garlic, rosemary, thyme, salt, and pepper to form a paste and spread liberally over the beef.
Cover with plastic wrap and let sit at room temperature for 30-60 minutes.
Preheat the oven to 500ºF.
Place the beef on a foil lined, rimmed baking sheet and roast for 30 minutes or until an instant read thermometer inserted into the center reaches 120ºF for medium rare.
Remove from the oven, tent with foil, and let sit for 30 minutes.
Combine the sour cream and horseradish and serve with the tenderloin.
