3tablespoonsmelted grass-fed butterghee, or coconut oil

½teaspoonvanilla extract
5strips baconcooked, cooled, and diced
½cupdark chocolate chips
Instructions
Preheat the oven to 325ºF.
In a bowl, mix the almond flour, tapioca starch, and baking soda.
In another bowl, beat the egg white and slowly add the honey, melted butter, maple extract, and vanilla extract.
Add the wet ingredients to the flour mixture and mix well.
Stir in the chopped bacon and chocolate chips.
Scoop the batter onto parchment-lined baking sheets using 2 spoons so that the dough will not stick to your fingers.
Bake for 12-13 minutes depending on the size of the cookies.
For flatter cookies that stack more easily, open the oven halfway through the baking time and flatten them gently with a spatula, then continue baking.
