Ingredients

tablespoons
butter
plus more for greasing the pan

coconut sugar or brown sugar

ounces
gluten-free beer
1
large egg

vanilla extract

all purpose gluten-free flour blend

sea salt

fresh or jarred cherries
coarsely chopped (apples or cranberries will also work well)

cup
chocolate chips
Fresh whipped cream or vanilla ice cream
for serving
Instructions
Preheat the oven to 350ºF. Lightly grease the bottom and sides of an 8×8-inch baking dish with butter.
In a small saucepan, melt the 8 tablespoons butter over low heat.
Add the sugar and stir constantly until it dissolves, about 1 minute.
Slowly add in the gluten-free beer and simmer for 2 minutes over low heat.
Remove from heat and let cool for about 5 minutes.
Once cool, whisk in the egg and vanilla.
In a separate bowl, combine the flour blend and sea salt.
Slowly mix the butter and sugar mixture into the flour and stir until just combined.
Fold in the cherries and chocolate chips.
Pour into the prepared pan and bake for 25-30 minutes, until the edges pull away slightly from the sides and the center feels firm to the touch.
Allow to cool for 1 hour before slicing and serving.
Serve with fresh whipped cream or vanilla ice cream.
