Cherry Chocolate Chip Beer Blondies

Ingredients

  • 8 tablespoons butter plus more for greasing the pan
  • 1 cup coconut sugar or brown sugar
  • 4 ounces gluten-free beer
  • 1 large egg
  • 1 tablespoon vanilla extract
  • cups all purpose gluten-free flour blend
  • ¼ teaspoon sea salt
  • ¾ cup fresh or jarred cherries coarsely chopped (apples or cranberries will also work well)
  • ¾ cup chocolate chips
  • Fresh whipped cream or vanilla ice cream for serving

Instructions

  • Preheat the oven to 350ºF. Lightly grease the bottom and sides of an 8×8-inch baking dish with butter.
  • In a small saucepan, melt the 8 tablespoons butter over low heat.
  • Add the sugar and stir constantly until it dissolves, about 1 minute.
  • Slowly add in the gluten-free beer and simmer for 2 minutes over low heat.
  • Remove from heat and let cool for about 5 minutes.
  • Once cool, whisk in the egg and vanilla.
  • In a separate bowl, combine the flour blend and sea salt.
  • Slowly mix the butter and sugar mixture into the flour and stir until just combined.
  • Fold in the cherries and chocolate chips.
  • Pour into the prepared pan and bake for 25-30 minutes, until the edges pull away slightly from the sides and the center feels firm to the touch.
  • Allow to cool for 1 hour before slicing and serving.
  • Serve with fresh whipped cream or vanilla ice cream.
