Ingredients
- 1½ pounds Italian sausage sweet or hot
- 2 tablespoons olive oil
- 2 onions finely chopped
- 2 jalapeño peppers seeds removed to reduce heat, optional
- 1 large sweet potato peeled and diced into ½-inch pieces
- 8-10 garlic cloves minced
- 1 12-ounce bottle gluten-free beer
- 1½ cups pureed pumpkin
- 8 ounces tomato paste
- 1 tablespoon paprika
- 1 tablespoon ground cumin
- 2 teaspoons ground cinnamon
- 3 cups gluten-free beef or chicken broth
- 1 28-ounce can diced tomatoes
- 1 15-ounce can cannellini beans
- 1 teaspoon sea salt or more to taste
Optional Garnishes:
- 1 avocado pitted and diced
- ½ cup sour cream or plain Greek-style yogurt regular or dairy-free
- 2 limes cut into wedges
- ¼ cup red or green onions diced
- ¼ cup shredded cheese regular or dairy-free
- 2 tablespoons cilantro chopped
Instructions
- Heat a large Dutch oven or large saucepan over medium heat and add the Italian sausage. Cook until brown and just cooked through.
- Remove meat from pot and drain the drippings.
- Add the oil to the pan and swirl to coat the bottom.
- Add the onion, jalapeños (if using), and sweet potato and cook for 8 minutes or until lightly browned, stirring occasionally.
- Add the garlic and cook for 1 minute, stirring constantly.
- Stir in the beer, scraping the bottom of the pan to loosen any browned bits.
- Bring to a low boil. Cook until the liquid almost evaporates (about 10 minutes), stirring occasionally.
- Stir in the pumpkin, tomato paste, paprika, cumin, and cinnamon.
- Cook for 1 minute, stirring frequently.
- Add the sausage back to the pan and then add the broth, tomatoes, beans, and salt.
- Bring to a boil. Reduce heat and simmer for 1½ hours or until the mixture is thick.
- Stir occasionally.
- Taste for salt and add more if needed.
- Spoon into bowls and garnish each bowl as desired.
