Ingredients

  • pounds Italian sausage sweet or hot
  • 2 tablespoons olive oil
  • 2 onions finely chopped
  • 2 jalapeño peppers seeds removed to reduce heat, optional
  • 1 large sweet potato peeled and diced into ½-inch pieces
  • 8-10 garlic cloves minced
  • 1 12-ounce bottle gluten-free beer
  • cups pureed pumpkin
  • 8 ounces tomato paste
  • 1 tablespoon paprika
  • 1 tablespoon ground cumin
  • 2 teaspoons ground cinnamon
  • 3 cups gluten-free beef or chicken broth
  • 1 28-ounce can diced tomatoes
  • 1 15-ounce can cannellini beans
  • 1 teaspoon sea salt or more to taste

Optional Garnishes:

  • 1 avocado pitted and diced
  • ½ cup sour cream or plain Greek-style yogurt  regular or dairy-free
  • 2 limes cut into wedges
  • ¼ cup red or green onions diced
  • ¼ cup shredded cheese regular or dairy-free
  • 2 tablespoons cilantro chopped

Instructions

  • Heat a large Dutch oven or large saucepan over medium heat and add the Italian sausage. Cook until brown and just cooked through.
  • Remove meat from pot and drain the drippings.
  • Add the oil to the pan and swirl to coat the bottom.
  • Add the onion, jalapeños (if using), and sweet potato and cook for 8 minutes or until lightly browned, stirring occasionally.
  • Add the garlic and cook for 1 minute, stirring constantly.
  • Stir in the beer, scraping the bottom of the pan to loosen any browned bits.
  • Bring to a low boil. Cook until the liquid almost evaporates (about 10 minutes), stirring occasionally.
  • Stir in the pumpkin, tomato paste, paprika, cumin, and cinnamon.
  • Cook for 1 minute, stirring frequently.
  • Add the sausage back to the pan and then add the broth, tomatoes, beans, and salt.
  • Bring to a boil. Reduce heat and simmer for 1½ hours or until the mixture is thick.
  • Stir occasionally.
  • Taste for salt and add more if needed.
  • Spoon into bowls and garnish each bowl as desired.
