1large or 2 small appleschopped (no need to peel)
1yellow onionchopped
½cupchopped carrots
3cupscooked long-grain riceI like white or brown basmati rice
½cupraisins
1tablespoondried parsley flakes or 2 tablespoons chopped fresh parsley
1tablespoonbrown sugar
½teaspoonground allspice
½teaspoonground cinnamon
¼teaspoonblack pepper
1/3cupchicken broth or water
Instructions
Use a 4-quart slow cooker.
Spray the inside of your cooker with cooking spray and add in the sliced sausage, apple, onion, and carrots.
Stir in the rice, raisins, parsley, and spices.
Pour the chicken broth or water evenly over the top.
Stir again to incorporate the liquid.
Cover and cook on low for 5-7 hours, or on high for about 3 hours.
Serve in bowls.
The finished texture will be that of fried rice, not a stuck-together casserole. The flavors blend together to create a perfect medley. This is like eating fall in a bowl!
