Autumn Sausage and Rice Casserole

Ingredients

  • Gluten-free nonstick cooking spray
  • 1 pound Aidell’s gluten-free chicken and artichoke sausage sliced
  • 1 large or 2 small apples chopped (no need to peel)
  • 1 yellow onion chopped
  • ½ cup chopped carrots
  • 3 cups cooked long-grain rice I like white or brown basmati rice
  • ½ cup raisins
  • 1 tablespoon dried parsley flakes or 2 tablespoons chopped fresh parsley
  • 1 tablespoon brown sugar
  • ½ teaspoon ground allspice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon black pepper
  • 1/3 cup chicken broth or water

Instructions

  • Use a 4-quart slow cooker.
  • Spray the inside of your cooker with cooking spray and add in the sliced sausage, apple, onion, and carrots.
  • Stir in the rice, raisins, parsley, and spices.
  • Pour the chicken broth or water evenly over the top.
  • Stir again to incorporate the liquid.
  • Cover and cook on low for 5-7 hours, or on high for about 3 hours.
  • Serve in bowls.
  • The finished texture will be that of fried rice, not a stuck-together casserole. The flavors blend together to create a perfect medley. This is like eating fall in a bowl!
