Ingredients
- Gluten-free nonstick cooking spray
- 1 pound Aidell’s gluten-free chicken and artichoke sausage sliced
- 1 large or 2 small apples chopped (no need to peel)
- 1 yellow onion chopped
- ½ cup chopped carrots
- 3 cups cooked long-grain rice I like white or brown basmati rice
- ½ cup raisins
- 1 tablespoon dried parsley flakes or 2 tablespoons chopped fresh parsley
- 1 tablespoon brown sugar
- ½ teaspoon ground allspice
- ½ teaspoon ground cinnamon
- ¼ teaspoon black pepper
- 1/3 cup chicken broth or water
Instructions
- Use a 4-quart slow cooker.
- Spray the inside of your cooker with cooking spray and add in the sliced sausage, apple, onion, and carrots.
- Stir in the rice, raisins, parsley, and spices.
- Pour the chicken broth or water evenly over the top.
- Stir again to incorporate the liquid.
- Cover and cook on low for 5-7 hours, or on high for about 3 hours.
- Serve in bowls.
- The finished texture will be that of fried rice, not a stuck-together casserole. The flavors blend together to create a perfect medley. This is like eating fall in a bowl!
