Instructions
In a medium saucepan, combine the strawberries, ¼ cup coconut sugar, 2 tablespoons water, and 1 teaspoon lime juice.
Simmer gently for 2-3 minutes.
Remove from heat and cool for 5 minutes.
Pour into a blender and puree to desired consistency.
Fill each popsicle mold 1/3 of the way with the strawberry mixture.
Freeze for 30 minutes.
In a small bowl, combine the coconut yogurt and coconut cream.
Remove the molds from the freezer after 30 minutes and top the strawberry layer with the yogurt mixture.
The molds should now be 2/3 of the way full, leaving enough room to top with the final layer.
Return the pops to the freezer for 15-30 minutes.
In a medium saucepan, combine the blueberries, remaining ¼ cup coconut sugar, 2 tablespoons water, and 1 teaspoon lime juice.
Simmer gently for 2-3 minutes.
Remove from heat and let cool for 5 minutes.
Pour into a blender and puree to desired consistency.
Remove the molds from the freezer and top the yogurt layer with the blueberry mixture.
Return to the freezer to set for 1 more hour before serving.
