Bring a large pot of water to a boil. Add the soba noodles and cook, stirring occasionally so they don’t clump, for 8 minutes or until tender. Drain and rinse with cold water.
Whisk together the tamari, sesame oil, vinegar, sugar, and pepper.
Heat the vegetable oil in a large skillet or wok until it begins to shimmer, add the shallot, garlic, and ginger paste, and cook, stirring for about 30 seconds or until fragrant. Add the sesame oil mixture and cook for 30 seconds. Add the noodles and cook, tossing until the noodles are coated and heated through. Add the green onions and half the Eden Shake. Give a quick toss and garnish with the rest of the Eden Shake and chili oil if desired.
