Preheat the oven to 350ºF. Line a large baking sheet with parchment paper. Arrange the oats and almonds on a baking sheet. Place in the oven and bake for about 5-7 minutes, stirring occasionally so they don't burn. Remove from the oven, add honey and mix thoroughly. Set the granola aside for 15 minutes to cool.
Meanwhile, cut strawberries into quarters, place them in a bowl. Sprinkle them with 1 tablespoon of powdered sugar, mix gently and set aside. In another bowl, mix the mascarpone with the remaining tablespoon of sugar and vanilla extract until all ingredients are thoroughly combined.
Prepare two glasses. Place a layer of mascarpone on the bottom of each, sprinkle with a layer of granola and add a layer of strawberries. Repeat until all the ingredients are used up. Garnish with fresh mint and serve immediately.
