Easy Strawberry Parfait

Ingredients 

  • cup gluten-free rolled oats
  • cup almonds, , chopped
  • 1 tablespoon natural honey
  • 1 cup fresh strawberries
  • 2 tablespoons powdered sugar
  • ½ cup mascarpone cheese
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon fresh mint for decoration

Instructions 

  • Preheat the oven to 350ºF. Line a large baking sheet with parchment paper. Arrange the oats and almonds on a baking sheet. Place in the oven and bake for about 5-7 minutes, stirring occasionally so they don't burn. Remove from the oven, add honey and mix thoroughly. Set the granola aside for 15 minutes to cool.
  • Meanwhile, cut strawberries into quarters, place them in a bowl. Sprinkle them with 1 tablespoon of powdered sugar, mix gently and set aside. In another bowl, mix the mascarpone with the remaining tablespoon of sugar and vanilla extract until all ingredients are thoroughly combined.
  • Prepare two glasses. Place a layer of mascarpone on the bottom of each, sprinkle with a layer of granola and add a layer of strawberries. Repeat until all the ingredients are used up. Garnish with fresh mint and serve immediately.
