Preheat the oven to 350ºF. Line a large baking tray with parchment paper. Brush both sides of bread with butter and place on the baking tray. Bake for 5-7 minutes, until golden, turning halfway through. Remove the tray from the oven and set aside for 15 minutes to cool.
Spread the ricotta on the toast, and top with blueberries and mango slices. Drizzle with honey and decorate with fresh mint leaves. Serve immediately.
