Instructions
Preheat the waffle iron to medium-high temperature.
In a medium-sized bowl, mash the bananas. Mix in the eggs, baking powder, and gluten-free flour.
Spray the waffle iron with light cooking spray if the iron is not nonstick. Add half the batter.
Cook for 3-5 minutes until waffle is crispy around the edges and fluffy in the center. Cooking time may vary for each waffle iron.
Remove from iron and cook remaining half of batter to make the second waffle. Top with sugar-free syrup, berries, or vegan chocolate chips, and enjoy!
Notes
• For a low-fat option use ½ cup egg whites instead of whole eggs
