1tablespoonlow sodium tamari or gluten-free soy sauce
2teaspoonsEden Foods Hot Pepper Sesame Oil
2garlic cloves, grated
2 ½teaspoonssugar
1teaspoonkosher or fine sea salt
2seedless cucumbers, washed and dried
1cupfresh cilantro leaves
2teaspoonstoasted white sesame seeds
Optional–red pepper flakes
Instructions
In a mixing bowl, combine the vinegar, tamari, sesame oil, garlic, sugar, and salt. Stir until sugar and salt are dissolved.
Lay cucumbers flat on a cutting board. Place the flat side of a large knife on the cucumber and lightly smash it along the full length of the cucumber. Cut on an angle into bite-sized pieces. Add to the dressing and toss. Add cilantro and sesame seeds and toss again. Garnish with red pepper flakes if desired.
Can be served at room temperature or chilled and served cold.
