Spicy Smashed Cucumber Salad

I love making salads for lunch and I love it even more if the salad is easy to make. This Spicy Smashed Cucumber Salad is easy to make and is perfect for those quick lunch hours. This salad is a refreshing and vibrant dish that will have everyone wanting more.

To make this salad you start out by combining the Eden Foods Brown Rice Vinegar, tamari, Eden Foods Hot Pepper Sesame Oil, garlic, sugar, and salt in a mixing bowl until the sugar and salt are dissolved. Then you lightly smash the cucumbers with a knife and cut on an angle into bit-sized pieces. Once the cucumbers are cut you add them into the dressing and toss. I like to garnish mine with red pepper flakes and sesame seeds.

Spicy Smashed Cucumber Salad

Ingredients

  • 1 ½ tablespoons Eden Foods Brown Rice Vinegar
  • 1 tablespoon low sodium tamari or gluten-free soy sauce
  • 2 teaspoons Eden Foods Hot Pepper Sesame Oil
  • 2 garlic cloves , grated
  • 2 ½ teaspoons sugar
  • 1 teaspoon kosher or fine sea salt
  • 2 seedless cucumbers , washed and dried
  • 1 cup fresh cilantro leaves
  • 2 teaspoons toasted white sesame seeds
  • Optional–red pepper flakes

Instructions

  • In a mixing bowl, combine the vinegar, tamari, sesame oil, garlic, sugar, and salt. Stir until sugar and salt are dissolved.
  • Lay cucumbers flat on a cutting board. Place the flat side of a large knife on the cucumber and lightly smash it along the full length of the cucumber. Cut on an angle into bite-sized pieces. Add to the dressing and toss. Add cilantro and sesame seeds and toss again. Garnish with red pepper flakes if desired.
  • Can be served at room temperature or chilled and served cold.
