large tart apples
, such as Cortland, Mutsu, Jonathan or Crispin, cored, peeled and roughly chopped

A pinch of kosher salt

Instructions
Place the apples, sugar and salt in a medium-size, heavy saucepan and add water to barely cover the apples.
Bring to a boil over medium heat and cook for 15-20 minutes, mashing up the apples as they get tender and start to break down.
Allow the applesauce to cool, then add the cinnamon to taste.
Serve warm or cold. For a smoother consistency, purée in a food processor.
