Instructions
Preheat the oven to 375 ° F. Butter a 2-quart baking dish; set aside.
In a large bowl, mix together the apples, cranberries, sugar, and apple pie spice. Spoon into the prepared baking dish.
In a medium bowl, mix together the oats, brown sugar, salt, pecans, coconut, and flour. Stir in the melted butter or substitute.
Sprinkle the oatmeal mixture evenly over the top of the apples. Bake for 30-40 minutes until bubbly and the apples are tender.
Serve warm or cold with a scoop of vanilla ice cream, if desired.
