Apple-Cranberry Bake

Ingredients

  • 3 large Granny Smith apples , cored and sliced ¼ inch thick
  • heaping cups (about 150 g) frozen cranberries
  • 4 tablespoons (50 g) granulated sugar
  • ½ teaspoon apple pie spice powder
  • 1 cup (80 g) gluten-free quick-cooking oats
  • ¾ cup (150 g) brown sugar
  • A pinch of kosher salt
  • ½ cup (55 g) chopped pecans
  • ¼ cup (20 g) shredded unsweetened coconut
  • ¼ cup (35 g) gluten-free flour with xanthan gum, such as Bob’s Red Mill
  • ½ cup (118.5 mL) melted butter or butter substitute, such as Earth Balance buttery spread, plus more for buttering the dish

Instructions

  • Preheat the oven to 375 ° F. Butter a 2-quart baking dish; set aside.
  • In a large bowl, mix together the apples, cranberries, sugar, and apple pie spice. Spoon into the prepared baking dish.
  • In a medium bowl, mix together the oats, brown sugar, salt, pecans, coconut, and flour. Stir in the melted butter or substitute.
  • Sprinkle the oatmeal mixture evenly over the top of the apples. Bake for 30-40 minutes until bubbly and the apples are tender.
  • Serve warm or cold with a scoop of vanilla ice cream, if desired.
