Combine butter, marshmallow cream, pumpkin, and spice blend in a mixer and beat until light and fluffy. Add enough food coloring to make orange, beating it in. Gradually beat in the powdered sugar, scraping the sides and bottom of bowl as needed.

Place about a teaspoon of filling on the flat side of one cookie then top with a second cookie, pressing gently to spread the filling. Repeat with the rest of the filling and cookies.
