Mini Chocolate Pumpkin Cookie Bites
Pumpkin is the flavor of the season. This season I have been going to town with pumpkin baked goods. The treat I am obsessing over the most right now are these Mini Chocolate Pumpkin Cookie Bites. These sweet little pumpkin bites are perfect to bring over to a fall party for everyone to enjoy.
To make these bites you combine the butter, marshmallow cream, pumpkin, and pumpkin pie spice and blend it until it is light and fluffy. Then you add food coloring to make the mixture orange and add in the powder sugar. The fun part of this recipe is assembling the cookie bites. You take one Home Free Double Chocolate Chip Mini Cookies and place a teaspoon of the filling on the flat side and top with another cookie.

Mini Chocolate Pumpkin Cookie Bites
Ingredients
- 4 tablespoons unsalted butter , softened
- ½ cup marshmallow cream
- 2 tablespoons canned pumpkin
- ½ teaspoon pumpkin pie spice
- Orange food coloring
- 8 ounces powdered sugar , sifted
- 2 boxes Home Free Double Chocolate Chip Mini Cookies
Instructions
- Combine butter, marshmallow cream, pumpkin, and spice blend in a mixer and beat until light and fluffy. Add enough food coloring to make orange, beating it in. Gradually beat in the powdered sugar, scraping the sides and bottom of bowl as needed.
- Place about a teaspoon of filling on the flat side of one cookie then top with a second cookie, pressing gently to spread the filling. Repeat with the rest of the filling and cookies.
