Carefully trim the outer leaves, leaving the stem intact. This helps the cauliflower steak stay together. Slice directly through the middle of the cauliflower head. Carefully cut 1-1 ½ inch thick slices. You should be able to get 2 large steaks out of a head of cauliflower.
Gently place the cauliflower slices onto a foil-lined baking sheet.
Whisk together the olive oil, poultry seasoning, and soy sauce until well combined, and then generously brush half of the marinade over the cauliflower steaks, reserving half for the other side.
Sprinkle with breadcrumbs using about ½ tablespoon per steak, per side. Bake in the oven for 13-15 minutes, until the cauliflower begins to brown.
Carefully flip each cauliflower steak, brush the rest of the marinade over the top, sprinkle with remaining breadcrumbs and return to the oven for another 8-10 minutes.
