Begin by soaking the Eden Foods Dried Lotus Root Slices. Place the slices in a bowl and cover them with warm water. Let them soak for about 20-30 minutes or until they become soft and pliable. Drain and set aside.
Cook the Eden Foods Bifun Pasta according to the package instructions. Once cooked, drain, and rinse them with cold water to stop the cooking process. Set aside.
In a large pan or wok, heat the vegetable oil over medium-high heat.
Add the minced garlic and sauté for about 30 seconds or until fragrant.
Add the rehydrated lotus root slices, red bell pepper, zucchini, mushrooms, and snow peas to the pan. Stir-fry for about 5-6 minutes, until the vegetables are tender-crisp.
In a small bowl, whisk together the gluten-free tamari or soy sauce, rice vinegar, Umeboshi paste, maple syrup, and half of the Eden Foods Gomasio.
Add the cooked bifun noodles to the pan with the stir-fried vegetables.
Pour the sauce mixture over the noodles and vegetables. Stir-fry for an additional 2-3 minutes, ensuring the sauce coats everything evenly.
Season with salt and pepper to taste.
Serve garnished with the remaining Eden Foods Gomasio and chopped green onions. Drizzle with chili crisp if desired.
