Wash, peel and slice the carrots on the bias into similar sized pieces so that they cook evenly.
In an oven-safe casserole dish, combine the carrots, oil, maple syrup and sprigs of thyme. Season with salt and pepper. Stir well to coat the carrots evenly.
Bake 20 minutes or until fork tender. Remove from the oven and discard the tough stems from the thyme.
Sprinkle more fresh thyme leaves to garnish and serve.
