Instructions
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
Add the sliced chicken breast to the skillet and season with salt and pepper. Cook until the chicken is browned and cooked through about 5-6 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers and onion to the skillet and cook until they start to soften, about 3-4 minutes.
Add the minced garlic and snow peas to the skillet and cook for an additional 2 minutes.
Return the cooked chicken to the skillet and pour the San-J Thai Peanut Sauce over the chicken and vegetables. Stir well to coat everything evenly in the sauce. Cook for another 2-3 minutes, until everything is heated through.
Taste and adjust seasoning with salt and pepper if necessary.
Serve the Thai peanut chicken stir-fry over cooked rice or rice noodles and more peanut sauce on the side.
Garnish with chopped green onions and chopped peanuts if desired.
