  • 1 yellow bell pepper , thinly sliced
  • 1 small onion , thinly sliced
  • 2 cloves garlic , minced
  • 1 cup snap peas , trimmed and cut in half diagonally
  • ½ cup San-J Thai Peanut Sauce , plus more for serving

Instructions

  • Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

  • Taste and adjust seasoning with salt and pepper if necessary.
  • Serve the Thai peanut chicken stir-fry over cooked rice or rice noodles and more peanut sauce on the side.
  • Garnish with chopped green onions and chopped peanuts if desired.
