Whipped Vanilla Ricotta with Roasted Strawberries

Ingredients

  • 1 pound fresh strawberries , hulled and cut in half if large
  • 3 tablespoons sugar
  • 1 Singing Dog Vanilla Bean , cut in half vertically
  • 2 cups whole milk ricotta cheese
  • 1 tablespoon honey
  • 2 teaspoons Singing Dog Vanilla Bean Paste
  • 1 teaspoon fresh lemon juice
  • Toasted gluten free baguette slices , to serve

Instructions

  • Preheat oven to 425°F.
  • Place strawberries in a non-reactive baking dish (glass or ceramic). Sprinkle with sugar, scrape the beans from the vanilla bean onto the strawberries, add the bean, and toss.
  • Bake for 30 minutes, stirring halfway through. Let cool.
  • Combine ricotta, honey, vanilla bean paste, and lemon juice in a small food processor or blender. Process until smooth. Transfer to a serving dish and serve with the roasted strawberries and baguette slices.
