Whipped Vanilla Ricotta with Roasted Strawberries
Ingredients
- 1 pound fresh strawberries , hulled and cut in half if large
- 3 tablespoons sugar
- 1 Singing Dog Vanilla Bean , cut in half vertically
- 2 cups whole milk ricotta cheese
- 1 tablespoon honey
- 2 teaspoons Singing Dog Vanilla Bean Paste
- 1 teaspoon fresh lemon juice
- Toasted gluten free baguette slices , to serve
Instructions
- Preheat oven to 425°F.
- Place strawberries in a non-reactive baking dish (glass or ceramic). Sprinkle with sugar, scrape the beans from the vanilla bean onto the strawberries, add the bean, and toss.
- Bake for 30 minutes, stirring halfway through. Let cool.
- Combine ricotta, honey, vanilla bean paste, and lemon juice in a small food processor or blender. Process until smooth. Transfer to a serving dish and serve with the roasted strawberries and baguette slices.
