Preheat oven to 400 degrees. Line two baking sheets with parchment paper.
Whisk together the tamari, oil, nutritional yeast, maple syrup, garlic powder, liquid smoke, pepper, and paprika. Pour into a container large enough to hold the rice paper sheets.
Place one piece of rice paper in the marinade, flip, and make sure it is fully coated and is starting to soften. Place on a cutting board. Dip a second piece of rice paper into the marinade, fully coating it, and then place on top of the other coated rice paper. Using a pizza cutter, cut into bacon-width strips. Place on prepared baking sheets and repeat with the rest of the ingredients, whisking the marinade occasionally to prevent spreading.
Bake for 7 – 8 minutes or until crisp but keep an eye on them to prevent over-cooking. Remove from the baking sheets immediately to avoid burning or over-cooking.
