Pour some cacao nibs or sprinkles into a small plate. Line a food storage container with wax or parchment paper.
Place a small scoop of ice cream on the flat surface of one cookie. Top with another cookie, placing the flat side on the ice cream. Squeeze gently. Roll the sides of the sandwich in the cacao nibs or sprinkles. Place in the container. Repeat with the rest of the ingredients.
Cover and freeze for 30 minutes or until ready to serve. Can be made 1 week ahead.
