(6-ounce) salmon fillets

Dijon mustard

San-J Koji Granola Original
crushed slightly

fresh thyme leaves

Instructions
Preheat oven to 400°F and line a baking sheet with parchment paper.
Season salmon fillets with salt and pepper, then brush the tops with Dijon mustard.
In a bowl, mix San-J Koji Granola, parsley, thyme, and lemon zest. Drizzle in olive oil and stir to combine.
Press the granola mixture onto the top of each salmon fillet.
Bake for 12-15 minutes or until the salmon flakes easily with a fork.
Drizzle with lemon juice and serve.
