Savory Gluten Free Granola & Herb-Crusted Salmon

Ingredients 

  • 4 (6-ounce) salmon fillets
  • ½ teaspoon kosher or fine sea salt
  • ¼ teaspoon black pepper
  • 1 teaspoon Dijon mustard
  • ½ cup San-J Koji Granola Original, crushed slightly
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 lemon, zest finely grated, and juice squeezed
  • 2 tablespoons olive oil

Instructions 

  • Preheat oven to 400°F and line a baking sheet with parchment paper.
  • Season salmon fillets with salt and pepper, then brush the tops with Dijon mustard.
  • In a bowl, mix San-J Koji Granola, parsley, thyme, and lemon zest. Drizzle in olive oil and stir to combine.
  • Press the granola mixture onto the top of each salmon fillet.
