Ingredients 

  • 1 whole snapper, about 2 to 2½ pounds, cleaned and scaled
  • Avocado oil
  • Kosher or fine sea salt
  • Freshly ground black pepper
  • 2 tablespoons gluten-free miso
  • 1 tablespoon pure maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 garlic clove, finely grated
  • 1 teaspoon freshly grated ginger
  • ¾ cup San-J Premium Koji Granola Matcha Flavor
  • 1 tablespoon sesame seeds
  • 1 teaspoon finely grated lime zest
  • 2 green onions, very thinly sliced on the diagonal
  • ¼ cup fresh cilantro leaves
  • 2 limes

Instructions 

  • Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper. Pat the yellowtail snapper very dry with paper towels. Using a sharp knife, make 3 or 4 diagonal cuts through the skin on each side of the fish, cutting almost to the bone.
  • Place the fish on the prepared baking sheet. Brush both sides and the inside cavity with the avocado oil. Season lightly with salt and pepper.
  • In a small bowl, whisk together the white miso, maple syrup, rice vinegar, sesame oil, garlic, and ginger until smooth.

  • Roast the fish, flesh-side up, for 12 to 14 minutes, depending on the thickness of the fish. The flesh should be nearly cooked through and flake easily when tested near the thickest part.
