Gluten Free Coconut Cilantro Lime Rice on the Grill Recipe
Ingredients
- 3 cups instant rice
- 1 14-ounce can full-fat or light coconut milk
- Kosher or fine sea salt
- 1½ tablespoons butter or dairy-free butter substitute, cut into small pieces
- 2 limes, zest finely grated and juiced
- ⅓ cup fresh cilantro leaves, minced
- Freshly ground black pepper
Instructions
- Prepare the grill for direct heat and preheat to medium.
- Pour the rice into a 9x12-inch disposable foil baking pan. Pour the coconut milk into a 4-cup measuring cup and add enough water to make 3 cups total. Add 1 teaspoon of salt and pour the mixture over the rice. Stir to combine. Dot with the butter and cover the pan tightly with foil. Grill with the lid closed for 12-15 minutes. Remove from the grill and stir in the lime zest, lime juice, and cilantro. Re-cover the pan with foil and let sit another 5 minutes. Remove the foil and fluff with a fork. Season to taste with salt and pepper.
