What do you do when you want something sweet and delicious for dessert and you want it to be easy … and you want it now? And you are not in the mood for ice cream or packaged cookies, you are in the mood for something homemade?

Mug cakes are the answer! A little stirring, a minute or two in the microwave and voila! Homemade cake! Seriously, does it get any better than that?

Well, yes actually. Not only are these Sunbutter and Jelly Mug Cakes quick and easy, they use stuff you probably already have in your pantry and no gluten free flour. They are gluten free, nut free, and can easily be made dairy free by using full fat coconut milk in place of the cream.

So next time you want a quick cake fix (or as in my case one of your g-kids looks at you with big blue eyes and sweetly asks if you have any cake) realize you are only a couple minutes away from cake-eating fun.

Gluten Free Sunbutter and Jelly Mug Cake Recipe

Ingredients 

  • Gluten free non-stick cooking spray
  • 2 tablespoons Creamy Sunbutter
  • 1 tablespoon sugar
  • ΒΌ teaspoon baking powder
  • 1 tablespoon heavy cream or full fat coconut milk
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon jelly or jam of your choice

Instructions 

  • Liberally spray a small (4-ounce) microwave-safe cup, mug, or ramekin with cooking spray.
  • In a small bowl, whisk together the Sunbutter, sugar, baking powder, cream or coconut milk, egg, and vanilla until smooth. Pour into the prepared mug and microwave on full power for 60 to 75 seconds or until the cake has risen and is firm to the touch. Top with the jelly or jam, let cool, and serve.

      Sk, You mean inside as opposed to on top? I did try that it just wasn’t as pretty haha it was okay, just a little mushy on the inside.
