Vietnamese-Inspired Glazed Chicken Wings
Ingredients
- 2 pounds (910 g) chicken wings and drumettes
- 1 teaspoon (6 g) kosher or fine sea salt, divided
- ¼ teaspoon (0.6 g) freshly ground black pepper
- ¼ cup (60 mL) honey
- ¼ cup (60 mL) coconut aminos
- 1 tablespoon (15 mL) fish sauce
- 1 tablespoon (15 g) minced garlic
- 1 tablespoon (15 g) minced ginger
- ¼ teaspoon (0.5 g) crushed red pepper flakes
- 2 teaspoons (5 g) sesame seeds, for garnish
- 2 green onions, , sliced, for garnish
Instructions
- Preheat the oven to 400°F. Line a baking sheet with aluminum foil and place a wire rack on top.
- Pat the wings dry and season them with ½ teaspoon salt and the black pepper. Place the wings on the wire rack. Bake for 50-60 minutes, turning halfway through, until brown and crispy.
- Meanwhile, combine the honey, coconut aminos, fish sauce, garlic, ginger, red pepper flakes, and ½ teaspoon salt in a small saucepan and bring to a low simmer. Cook, stirring constantly, until the sauce has thickened and reduced by half, about 10 minutes. Strain the sauce into a large mixing bowl.
- Remove the wings from the oven and transfer them to the mixing bowl. Toss until they are well coated with the sauce.
- Transfer the wings to a platter and garnish with a sprinkling of sesame seeds and sliced green onions.
