Shrimp & Andouille Sausage Skewers

Packed with flavor from roasted veggies and meat, these Shrimp & Andouille Sausage Skewers are simple to put together and throw on the grill.
Shrimp & Andouille Sausage Skewers
Ingredients
- 1 tablespoon (15 mL) extra virgin olive oil, plus more for greasing
- 2 teaspoons (10 mL) fresh lemon juice
- 1 teaspoon (2.4 g) Old Bay seasoning
- ½ teaspoon (1.5 g) garlic powder
- ¼ teaspoon (1.5 g) kosher or fine sea salt
- ¼ teaspoon (0.6 g) freshly ground black pepper
- 1 pound (454 g) large shrimp, peeled and deveined
- 1 large bell pepper, , cut into 1-inch pieces
- 1 large sweet onion, , cut into 1-inch pieces
- 12 ounces (340 g) andouille sausage, sliced into ½-inch thick pieces
- 1 cup (175 g) cherry tomatoes
Instructions
- Combine the olive oil, lemon juice, Old Bay seasoning, garlic powder, sea salt, and pepper together in a large mixing bowl. Add the shrimp and toss until well coated. Cover the bowl and refrigerate for 30 minutes.
- Thread alternating pieces of bell pepper, onion, shrimp, and andouille sausage onto skewers. Top each skewer with 1-2 cherry tomatoes.
- Preheat the grill to medium-high heat and lightly oil the grate. Grill the skewers for about 8-10 minutes, turning once, until the vegetables are tender and the shrimp is cooked through.
