WHIPPED VANILLA RICOTTA with Roasted Strawberries
Is your Valentine a sweet treat lover? This Whipped Vanilla Ricotta with Roasted Strawberries sets the tone for the sweetest night of the year.
Ingredients:
• 1-pound fresh strawberries, hulled and halved if large
• 3 tablespoons sugar
• 1 vanilla bean, split lengthwise
• 2 cups whole milk ricotta cheese
• 1 tablespoon honey
• 2 teaspoons vanilla bean paste
• 1 teaspoon fresh lemon juice
• Toasted gluten-free baguette slices, to serve
Directions:
- Preheat oven to 425°F.
- Place strawberries in a non-reactive baking dish. Sprinkle with sugar, scrape the beans from the vanilla pod onto the strawberries, add the pod, and toss.
- Bake for 30 minutes, stirring halfway through. Cool.
- Combine ricotta, honey, vanilla bean paste, and lemon juice in a food processor and blend until smooth.
- Serve with the roasted strawberries and gluten-free baguette slices.
Makes: 2 cups
